Christmas-strone Soup

A go-to one-pot wonder minestrone soup with a Christmas twist, a delicious winter warmer topped with croutons made of stuffing.

For the stock

  • Left-over turkey carcass
  • 1l vegetable stock
  • 1 carrot
  • 1 onion
  • 1 stick of celery
  • Fresh rosemary and time
  • Salt and pepper

For the soup

  • 1 medium onion, chopped
  • 1/3 of bunch of celery, chopped
  • 3 medium carrots, chopped
  • 3 garlic gloves, finely chopped
  • Butter
  • Fresh rosemary, thyme and oregano
  • 8-9 fine green beans, cut into thirds
  • 12 brussel sprouts, cut into fourths
  • 1 can chopped tomatoes
  • 1 can broad beans
  • 100g any leftover vegetables
  • 1l turkey stock (or vegetable stock)
  • Leftover turkey, shredded (or vegetarian sausages)
  • 50g pearl barley
  • 100g strong cheddar cheese, finely grated

For the stuffing croutons

  • Leftover stuffing
  • Olive oil or truffle oil
