  • 7 or 8 chicken thighs *alternatively use vegetarian sausages
  • 1 carrot, roughly chopped
  • 1 large onion, sliced into wedges
  • 1 beetroot, cut into wedges
  • A handful of Brussels sprouts, halved
  • 5 garlic cloves, unpeeled
  • 1 can of butter beans
  • 1 large glass of white wine
  • 500ml stock
  • Fresh rosemary and thyme
  • Butter
  • Extra virgin olive oil
  • Salt and pepper
  • 1 orange, cut into wedges
  • 4-5 tbsp marmalade
